Butter in cake can be substituted and I don’t mean by oil or margarine! Thanks go to a family friend who said her daughter uses applesauce instead of butter.
So inspite of my scepticism, tried out a lemon cake yesterday after some googling on applesauce and butter substitutes. Actually made two lemon cakes – one using applesauce and the other had pureed bananas which google informed me was a butter substitute. But the cake turned out a bit halwa-ish – sticky and stodgy – for my taste. The applesauce worked though (minus the yummy butter taste).
Added some candied orange peels on top.
